The magic of the Chile Red

Red peppers are magical in that they are almost like a completely different food than green chile. Peppers reds are high in starch and sugars nutrition component are different.

Chiles red peppers are rich in vitamin A, and green are a rich source vitamin C and contain mainly starch. Red peppers are often used fresh.

They are most commonly used in dry form and therefore are not as perishable as green peppers, which are highly perishable and must be frozen or canned to preserve it. Surprisingly, red chile is the world's best antioxidant and a great conservative.

This means that the red Chile is an important ingredient in food, life is much greater. Antioxidants also help prevent cancer.

Traditionally, the first step in the preservation of red pepper is connecting the body large strings of red peppers, called "channels" to accommodate drying. Commercially, the drying is done in large kilns, which are essentially the ovens at low temperature.

2 tablespoons unsalted butter, lard or bacon grease
2 tablespoons all-purpose flour
1 / 4 cup Mild Red Chile
Chile 1 / 4 cup red mass
2 cups beef broth or water
1 clove garlic, minced
Pinch ground Mexican oregano
Pinch ground cumin
3 / 4 c. tea salt (if you do not exchange)

1.Melt butter in a saucepan over medium size slow. Add flour and stir until smooth and slightly browned.

2.Remove pan from heat and add the ground peppers. Return to heat and gradually add stock. Add garlic, oregano, cumin, salt and, if using, and cook, stirring, about 10 minutes. Simmer at least 5 more minutes for the flavors to blend. If it becomes thick, thin with water and simmer to blend flavors.

Variation: Sauté 1 pound ground beef or cut meat cubes very small. Ignore shortening, and continue as above. It is used for enchiladas.
